Quinoa salad

Standard

I am loving this combination.

Quinoa salad- serves 8-10 large portions or many small ones

1 cup quinoa (amount uncooked, likely 4 cups cooked- I cooked in water but it would be even more delicious with chicken or veg broth)

1 large can lentils, drained and rinsed

2 large english cucumber chopped

pint sweet grape tomatoes cut in half if needed

large green pepper chopped

1 small slice red onion, finely minced

1/2 cup sunflower and pumpkin seeds pan toasted

Large handful each of fresh mint, cilantro and dill (all fresh from my garden)

Splash red wine vinegar

Hot pepper marinated olive oil

Packaged feta cheese with hot peppers, packed in oil and herbs (entire container used)

And because last night was one of those 4 drink nights that have me feeling depleted, we are drinking a lot of this strawberry mint water today
